Traditional Chinese hospitality demands a lavish and varied spread of dishes, ensuring that guests will be full before eating all the dishes. A typical Chinese banquet menu begins with a selection of cold appetizers, followed by hot dishes such as meats, chicken and duck, and vegetables. A whole fish is considered indispensable at most banquets, unless a variety of seafood has already been served. Nowadays, the Chinese enjoy incorporating Western specialties into traditional Chinese cuisine, so it is not uncommon to see steak on the table. Salads have also gained popularity, although traditionally the Chinese do not generally consume any dishes that have not been cooked. A banquet usually includes at least one soup, which can be served at the beginning or the end of the meal. Desserts and fruits typically mark the conclusion of the banquet.
